1) What is Kefir?

Kefir is a cultured food that is rich in beneficial bacteria, minerals, B vitamin and amino acids. It is easily made at home and has a consistency slightly thinner than yogurt, making it an ideal breakfast drink.

2) How do I make Kefir?

To make kefir:

  • You will need:
    • 1 quart glass jar
    • 1 quart of organic milk (cow, goat or soy milk)
    • 5 grams of starter culture (1 individual package)
  • Heat one liter or quart of milk to 180°F or bring to a simmer. Cool to 73-77°F.
  • Dissolve 5 grams of culture in a small amount of the cooled milk in a cup. Pour back into the quart and mix well.
  • Pour the inoculated milk into a clean container, cover and let stand at room temperature until curd forms (approximately 24 hours).
  • Refrigerate about 8 hours to stop the process.
  • Stir to liquefy and enjoy. Always store Kefir in the refrigerator.
