Kefir is a cultured food that
is rich in beneficial bacteria, minerals, B vitamin and amino
acids. It is easily made at home and has a consistency slightly
thinner than yogurt, making it an ideal breakfast drink.
To make kefir:
- You will need:
- 1 quart glass jar
- 1 quart of organic milk (cow, goat or
soy milk)
- 5 grams of starter culture (1 individual
package)
- Heat one liter or quart
of milk to 180°F or bring to a simmer. Cool to 73-77°F.
- Dissolve 5 grams of culture
in a small amount of the cooled milk in a cup. Pour back
into the quart and mix well.
- Pour the inoculated milk
into a clean container, cover and let stand at room temperature
until curd forms (approximately 24 hours).
- Refrigerate about 8 hours
to stop the process.
- Stir to liquefy and enjoy.
Always store Kefir in the refrigerator.
