Banana-Pumpkin Seed Butter Bread
Ingredients
1/2 cup (120 ml) Omega Nutrition Pumpkin Seed Butter
1/2 cup (120 ml) Maple syrup
1 tsp (5 ml) Omega Nutrition Nutri-Flax®
2 Tbsp (30 ml) Water
1/4 cup (60 ml) Yogurt
1 1/4 cup (300 ml) Mashed bananas (3 small or 2 large)
1 cup (240 ml) Spelt flour
1/2 cup (120 ml) Buckwheat flour
1/2 tsp (2 ml) Salt
1/2 tsp (2 ml) Baking soda
Directions
In one bowl mix Nutri-Flax® and water together and let sit few minutes. Mix wet
ingredients in with Nutri-Flax® and water. In a separate bowl, mix dry ingredients
together. Then add dry ingredients to the wet ingredients.
Place mix in an oiled loaf pan and bake at 350°F (180°C) for 35-45 minutes.

Carob Almond Butter Crispies
Ingredients
1 cup (240 ml) Almond butter
12 drops Stevia Liquid Concentrate
3 Tbsp (45 ml) heaping Omega Nutrition Nutri-Flax®
2 Tbsp (30 ml) Carob powder
2 Tbsp (30 ml) Omega Nutrition Coconut Oil (or
Essential Balance® Oil)
1 Tbsp (15 ml) Vanilla flavoring
1/2 tsp Sea salt
4 cups Crushed, crisped brown rice cereal
1 cup (240 ml) Chopped pecans
Directions
Place the almond butter, stevia, Nutri-Flax®, carob, oil, vanilla, and salt
in a large mixing bowl. Combine thoroughly. Stir in the crisped rice and pecans. Shape the
mixture into 2-inch balls, and serve.

Chocolate Pudding
Ingredients
20 oz (600g) Soft tofu
1/3-1/2 cup (80-120 ml) Maple syrup (or Brown rice syrup)
3 Tbsp (45 ml) Omega Nutrition Essential Balance® Jr
1 Tbsp (15 ml) Vanilla
1/2 cup (120 ml) Cocoa powder
1 Banana
1 Organic lemon, juiced
Directions
Blend tofu, syrup, Essential Balance Jr™, vanilla, and cocoa powder in food
processor; blend until smooth. Scrape down sides with spatula if necessary. Pour into custard
cups and chill for 1 hour (or pour into freezie container and serve as ice cream bars).
Garnish pudding with banana slices and sprinkle with drops of lemon juice (to prevent
browning).
Yield
8 kid sized portions.

Coconut Short Bread
Ingredients
3/4 cup (180 ml) Omega Nutrition Coconut Oil
1/3 cup (80 ml) Raw sugar
2 cups (480 ml) Flour
1 tsp (5 ml) Vanilla
1/2 tsp (2 ml) Salt
1 cup (240 ml) Unsweetened coconut
Directions
Combine ingredients. Drop by teaspoon onto greased cookie sheet and bake 10-20
minutes at 350°F (180°C).

Creamy Rice Pudding
Ingredients
1 cup (240 ml) Basmati rice
1 cup (240 ml) Heavy cream
3 cups (720 ml) Water
1/4 tsp (1 ml) White stevia powder
1/2 cup (120 ml) Raisins
1/2 cup (120 ml) Shredded coconut
1 tsp (5 ml) Cinnamon
1/2 tsp (2 ml) Nutmeg
1/2 tsp (2 ml) Sea salt
Directions
In a medium saucepan, bring two cups of water to a boil. Add 1/2
tsp. sea salt and one cup Basmati rice. Bring to a second boil, cover, reduce heat to low and
cook 30 minutes until rice is tender. Combine cream, stevia, cinnamon, nutmeg, raisin, coconut
and remaining one cup of water with rice. Mix well. Place rice mixture in a casserole
dish and sprinkle with cinnamon. Bake at 350 degrees for 25-30 minutes or until pudding is
firm. Serve warm.

Crispy Chocolate Squares
Ingredients
3/4 cup (180 ml) Honey
1 tsp (5 ml) Vanilla
1 cup (240 ml) Semi-Sweet chocolate chips
1 cup (240 ml) Omega Nutrition Pumpkin Seed Butter
3 cups 720 ml) Rice cereal
1 cup (240 ml) Raisins or Pumpkin seeds (optional)
Directions
Combine honey and Pumpkin Seed Butter in a large saucepan. Stir constantly
on medium heat until smooth. Add cereal, chocolate chips, and seeds or raisins. Continue
stirring until well mixed, then stir in vanilla. Press into a greased 8" x 9" pan and chill
for 1 hour. When solid, cut into bars and serve.

Mock Maple Syrup
Ingredients
1 tsp (5 ml) Arrowroot (or 1-1/2 tsp Tapioca flour)
1 cup (240 ml) Water
1/8 tsp (.5 ml) White stevia powder
1/2 tsp (2 ml) Natural maple flavoring (corn-free)
1/2 tsp (2 ml) Natural vanilla flavoring or powder (corn-free)
Directions
In a saucepan, stir the arrowroot or tapioca flour into the water. Bring
the mixture to a boil - it will thicken slightly and become clear. Stir in the stevia and
flavorings, taking care that the stevia is completely dissolved. Serve immediately or when
slightly cooled. Any leftover syrup may be refrigerated and, if necessary, reheated to
redissolve the starch.

Mom's Pie Crust
Ingredients
2 cups (480 ml) Unbleached white flour
1/2 tsp (2.5 ml) Sea salt (for taste only - not essential if on low salt diet)
1/2 cup (120 ml) Omega Nutrition Coconut Oil
1/4 cup (60 ml) Butter (unsalted, if possible)
1/4 cup (60 ml) Ice water (add until dough comes together)
Directions
Mix flour and salt in large bowl. Cut in Coconut Oil and butter with
pastry knife until crumbly. Add water to flour mixture until desired consistency. The true
amount of water in a pastry recipe varies depending on the moisture content of the flour. If
you add too much water, the dough gets tough, not enough and the dough can be too crumbly.
Chill dough before rolling into pie crust (keeps up to 1 week in fridge or longer in freezer).
Yield
1 double crust pie.

Pumpkin Seed Butter Brownies
Ingredients
1/3 cup (80 ml) Omega Nutrition Coconut Oil
1 1/3 cup (320 ml) Brown sugar, firmly packed
1/2 cup (120 ml) Omega Nutrition Pumpkin Seed Butter
3 Eggs
1 tsp (5 ml) Vanilla
1 cup (240 ml) Flour
3/4 tsp (3 ml) Baking powder
1/4 tsp (1 ml) Baking soda
1/2 tsp (2 ml) Salt
Directions
Melt butter in saucepan. Beat in brown sugar, Pumpkin Seed Butter, vanilla
and eggs until well blended. Add flour, baking powder, soda, salt, and blend well. Pour into a
9" x 12" pan (oiled with Coconut Oil). Bake in oven preheated to 350°F (180°C) for 20-30
minutes until toothpick inserted in center comes out clean. If desired, frost with Pumpkin
Seed Butter Frosting.

Pumpkin Seed Butter Cookies
Ingredients
1/4 cup (60 ml) Omega Nutrition Coconut Oil
1/2 cup (120 ml) Brown sugar, firmly packed
1 medium Egg, beaten
1/2 tsp (2 ml) Vanilla
1/2 cup (120 ml) Omega Nutrition Pumpkin Seed Butter
1 cup (240 ml) All purpose flour, unsifted
1/2 tsp (2 ml) Baking soda
1/2 tsp (2 ml) Sea salt
Directions
In a mixing bowl, cream Coconut Oil and sugar until light. Beat in egg
and vanilla. Blend in Pumpkin Seed Butter. In another bowl, mix together the flour, baking
soda and salt. Stir gradually into pumpkin seed butter mixture until well blended. Shape
cookie on un-greased cookie sheet.
Bake at 375°F for 12-15 minutes or until brown.

Vanilla Pudding
Ingredients
4 cups (960 ml) Water
1 Tbsp (15 ml) Agar powder (or 4 heaping Tbsp Agar flakes)
2 Tbsp (30 ml) Arrowroot
1/2 tsp (2 ml) Sea salt
1 Tbsp (15 ml) Lecithin granules
2 Tbsp (30 ml) Ghee
1 Tbsp (15 ml) Stevia working solution (1 tsp white stevia powder dissolved in 3 Tbsp water)
4 Tbsp (60 ml) Vanilla
3 small Yellow squash, chopped, cooked, drained, and pureed
Directions
Dissolve agar in 2 cups water. Dissolve arrowroot in 2 Tbsp water. Combine
agar and arrowroot and cook over low heat until thickened. Add sea salt, lecithin, ghee,
stevia and remaining water. Simmer 10-15 minutes.
Pour into a baking dish to cool and gel (this takes several hours, but can be done faster with
refrigeration). When firm, place mixture in a blender and blend until smooth. Add pureed
yellow squash and vanilla, and continue blending until very creamy. Serve.
